Thanks for mentioning Collabora.
Looks like Collabora Office (the new fork of LibreOffice) is already on flathub:

Collabora Office is 429MiB, LibreOffice is 311MiB (on flathub).
The difference is that Collabora rips out the Java UI and replaces it with Javascript, sharing code with Collabora Online. Simplified UI with fewer settings, more modern UX. Maybe I'll try this out.
And Collabora Online is the open source web based version of Collabora Office.
