Mint is a good choice, I think, and I don't see any reason you can't
install Gnome DE, even though it doesn't come default.

Personallky, I've moved to MX linux and it is so far my favorite Linux
distro ever.  (Debian Stable + additional selected packages that are
better to be more current for Desktop, Hardware support, VirtualBox,,, etc.)

But Mint will have native support for 3rd party Ubuntu packages, of
which there are many now.
