Off topic: First I would quadruple that amount of RAM. :P And while
you're at it, might as well pick up a second hard drive -- this
forgoes all of the partitioning troubles.

If that can't happen, then as far as I know:
1) Ubuntu's installer combined with grub is good at recognizing
Windows partitions and adding them to grub's menu.
2) NTFS support in Linux is better than Ext2/3 support in Windows.
(But, Ext2/3 exists for XP (or older, only) and works as well as you
need it to.)
