I have often thought so to myself too.

However, I struggle with what the tablet (let alone a pad) brings to 
my table that a laptop doesn't. Part of that problem is presumably 
that I type so much faster than I could ever write. How much hardware 
or software have I tried in the past such that resonated enough that I 
kept using it? Probably a very small percentage. OTOH - you never 
know, and probably can't really appreciate "what you're missing", 
until you try it and see if there is resonance.

Which is all to say, what might a touchscreen, or a pen, bring to the 
table that I don't already have, and might want?

And want to deal with battery life, recharging, and remember to take 
with me - if there's another device already in the room.

I get the e-reader idea, and one device replacing many (cell, pda, 
media player) but beyond that, haven't yet seen anything I 'must have' 
in a form factor that doesn't prop itself up and have a keyboard.

So what does a pad or tablet bring to one's table?
