Drupal is definitely used by educational institutions, but probably
not in the way you want. The main University of Waterloo website is in
Drupal (and in fact is hundreds of different Drupal sites).
Drupal can be used as a Learning Management System but that is not its
strength. Learning Management Systems have a lot of functionality for
keeping track of grades and having interactive quizzes. Drupal has
some integration capabilities with other LMSes, eg https://www.drupal.org/project/drupal_moodle_integration
