It seems that a) I'm not losing my mind and GNOME/Wayland does not in fact currently have VNC baked in, and b) they are working on fixing that (the Wayland VNC thing, not my mental health).

There was a recent thread here in response to a similar question that
I asked.

I tried VNC, but it is very slow.

NoMachine worked fine. There are .deb packages that you install using
gdebi and they work seamlessly. Little network overhead and very
responsive.
