I think your best bet is probably the Ubuntu minimal install. It allows
you to choose your preferred environment during the installation. Keep
in mind that there is no EFI support on that ISO, so if you're
installing on a new computer you need to make sure you're booting into
'legacy' or 'BIOS' mode.

I've used the minimal install several times and it is very nice; you can
choose which ever, or however many desktop environments you want (why
you would want this is beyond me, but you have the choice at the very
least), or to install without one -- typical for headless installs, but
it allows you to choose say dwm or awesome or whatever else after the
installation.

If your DE/s is/are installed correctly (and its/their .desktop file/s
is/are in the correct places) then your display manager should pick
it/them up without a problem.
