CentOS is still widely used because it is 100% compatible with Red Hat
which has been focusing on servers for many years before Ubuntu was even
conceived.
People who are more comfortable with RPM stay with CentOS.
Ubuntu is now also popular for servers.
Ubuntu Server offer many great features:
- The Debian dependency management system
- More current packages than Debian
- 5 year Long Term Support for security fixes (e.g. 12.04 will still have
support until 2017!)
But virtually all hosting companies offer both for VPS's and dedicated
servers.
