Theoretically the graphics card in my laptop can run more than two displays
as well, however the system is only configured for two video outputs.
Attempting to use the second video output on my docking station would
disable the on-board LCD, even though the graphics card is technically
capable of doing it. I've got a Lenovo with an nvidia card in my machine,
but this is a system design issue as opposed to a graphics vendor/driver
issue. It may be the same for your Dell as well.

Also, I have had quite a few problems with adding and removing screens in
11.10 with both Unity and gnome-shell. After manually changing my screens
with the nvidia tool, I need to blindly type "unity --restart" or "r" into
the alt+f2 dialogs of Unity and gnome-shell respectively. On the bright
side, you're using an intel card with open drivers supported by xrandr, so
you should have a smoother experience than I.
