Here is my list of possible ideas for topics:

Openshot - Video editor and possible alternatives
Gimp - (another vote for gimp)
A demo on design programs people have used. (Cad, Circuitboard
Prototyping, 3D design maybe blender?)
Audacity, Secure Audio Ripping via RubyRipper. (I may volunteer for this)
For those of us looking to convert our Audio to FLAC and other formats
without transcoding from Mutt Rips.
A demo on Converting your movies to high quality rips for archival purposes
also. (Borderline piracy aside I don't like disks and love my media I'm a
compulsive data horder because data takes up no space and actual hording
does so I see it as less of a problem :P)
A demo on secure methods of communication SSL IRC, Off The Record
messaging, Skype, Encrypted email, Encrypted voice.
A comparison of Linux compatible web browsers and possibly an explination
as to why anyone would still prefer older methods of browsing (not knocking
them just curious)
Showcase OpenHardware initiatives that we know about.
Setting up a shop with drupal.
Methods of sparking up your own opensource initiatives.

I'm sure I can come up with more but yes this is my list of suggestions.
