Thanks for all the responses. I'll have a look at trueCrypt.

The encryption/decryption should be simple, such as asking for a password when mounting the partition.

The data is not super sensitive, it just has to be unavailable to dumb crooks. Secure enough to make it a hassle to access.

The other thing is how cumbersome should the the encrypt/decrypt process be. 
There are many solutions. The main factor is the sensitivity of the data, 
and therefore the lengths that someone will go to get it. Easy is always 
less secure.
